It was in 2020 that the story of Boucherie Comtoise continued, with Emil Calistru taking over the business. That year marked the moment when the shop took root once again in the heart of Montreal, forging a special connection between the city and its local farmers.

In 2025, the butcher shop moved to Kirkland, where a new space is now open to continue offering quality products while staying true to its local roots.

As soon as you cross the threshold of our butcher's shop, the bewitching aroma of smoke will confirm to you that we prepare all our charcuterie on site. Every week, we offer you fresh produce, these are made under the meticulous supervision of our master craftsman, Emil Calistru.
Our red meats undergo maturation process which reduces their water content while preserving and even enhancing their flavor. We avoid wrapping our meats in plastic for the following reasons prevent any risk of bacterial proliferation, guaranteeing their quality and their safety.
Maturation is a process that allows the meat to lose moisture while concentrating its flavours and its taste. This process is carried out in a temperature-controlled cold room. carefully supervised by Emil, who meticulously selects each piece to ensure quality results.
